A New Cooking Adventure

I’ve been thinking about doing something a little different and fun. Since we’re all stuck at home right now, hopefully, I thought it would be fun to start a chronicle as to what my family is eating every day since our interaction with the outside world is so minimal and picking up food / dropping by the grocery store randomly isn’t in the cards.

Also, while grocery pick up is great to try and limit that interaction, lets’ be real and admit that we’re not getting everything we really want or order. I think I’ve tried to order bread flour four times now without success. So in the name of interesting meals and finally cleaning out and knowing what’s in my freezers, here is my debut of my home cooking adventure while in quarantine.

Day 1- Dinner

Freezer Orange Chicken and Veggies

To be transparent, we have Hello Fresh set to deliver three times a week which is amazingly nice. However, that still leave breakfast, lunch and 4 dinners a week to be planned. Thankfully, before all the crazy began, my family and I did a freezer fill trip to Trader Joes to stock up on the freezer items we love. This was way before COVID-19 had made it to the USA and is a typical thing the we do during our normal shopping trips. That and Costco.

This meal is one of our easier dinners meant typically for a busy week night when school and work collide together and don’t leave us a whole lot of time to throw something together. In our house, sitting around the dinner table, device free, is something we really enjoy given that the hubs and I are on technology all day long for work.

What is see above is all we needed for this meal. This is it, nothing else. Minus the rice, we can get roughly 5 meals out of this bag which is 2 adults and 1 kid in our house. The orange chicken and stir-fry veggies came from Trader Joes and the rice we buy in bulk from Costco. It took us 10 minutes to heat up. We threw some foil on a baking sheet to cook the chicken in the oven to avoid any mess, de-thawed the sauce under hot water still in the packet and only dirtied on pan to cook the veggies. Minimal mess!
